- 1 teaspoon fresh thyme leaves

Directions
- Preheat your oven to 400°F (200°C).
- Season the pork chops generously with salt and black pepper.
Heat a large cast iron skillet over medium-high heat. Add the tallow and real butter to the skillet and let it melt.
- Place the pork chops in the skillet and sear for about 3-4 minutes on each side, until nicely browned.
