Questions and Answers

Do you process the animals yourselves?

No - we have personally selected 3 local USDA processors to partner with to process and pack our beef, pork, lamb and chicken. We hope to one day have a hand in the processing stage of bringing our amazing meats direct to you.

What is dry-aging?

Dry aging is when you take a piece of meat and put it into a controlled open-air environment to go through a flavor transformation. By exposing the meat to air, moisture is pulled out and the natural enzymes in the beef break the muscles down slowly over time, making it more tender.

When will my order ship?

Ground shipping orders ship on Monday and occasionally Tuesday depending on volume. Shipping later in the week risks shipments getting stuck at distribution centers over the weekend and ruining the shipment.
